En el caso de alimentos microbiol\u00f3gicamente muy perecederos esta metodolog\u00eda debe establecer y validar su fecha de caducidad. Superada esta fecha, el alimento puede ser nocivo para la salud de las personas consumidoras, debido a la posible presencia y crecimiento de microorganismos pat\u00f3genos o la producci\u00f3n de sus toxinas.<\/p>\n<p>Este documento se fundamenta en varios documentos de referencia para esclarecer conceptos y explicar la metodolog\u00eda a seguir para la realizaci\u00f3n de estudios de vida \u00fatil segura, que aplican a alimentos microbiol\u00f3gicamente muy perecederos. Explica la relevancia de la caracterizaci\u00f3n del alimento como paso previo al estudio, as\u00ed como la consideraci\u00f3n de las condiciones razonablemente previsibles de conservaci\u00f3n, distribuci\u00f3n y uso.
